Recipe; Reese's S'mores Meets Cheesecake

Whenever we share anything S'mores related on our social media channels it is usually very well received. With this in mind we have created our very own dessert that is the perfect after dinner treat. Featuring the rich nutty taste of Reese's Peanut Butter Cups, the sweet chewy marshmallow on a yummy, crumbly Oreo base. This treat is designed to be served warm which really brings out the dreamy flavour. Fancy making this super easy dessert? Let's get started.

Ingredients

60g Unsalted Butter (plus extra for greasing)

110g Oreo Original or Reese's Peanut Butter Oreo

7 Digestive Biscuits

Approx 75g Reese's Peanut Butter Cups

200g quality Marshmallows such as Princess

Method

Lightly grease a 23cm spring form cake tin with a little butter and line the base with some greaseproof paper. Preheat your oven to 180c, gas mark 4.

Blitz up the Oreos and Digestives in a food processor to make a fine crumb.

Melt the butter over a low heat and once fully melted stir in the biscuit crumb.

Pour the mixture into your tin and press down firmly with the back of a spoon making sure it is even and level.

Pop it into the oven for 10 minutes to lightly bake the base. After 10 minutes remove and set it to one side to cool for 20 minutes in the tin.

Once it has cooled, arrange your Reese's Peanut Butter cups (with the packaging removed) in a circle at the centre of your biscuit base.

Layer the marshmallows over the top of the Peanut Butter Cups and surrounding them keeping away from the edge of the biscuit base. Leave the edges clear so that there is space for the marshmallow mixture to spread.

Bake in the oven at 180c (gas mark 4) until the marshmallow is melted and slightly brown, this takes around 10 minutes but will vary from oven to oven. Check on your dessert every couple of minutes to make sure it doesn't burn.

Remove from the oven and leave to cool in the tin for 5 minutes before serving in bowls. The base will be all crumbly and the topping will be melted  - just perfect!
